Soy-Braised Chicken Wings

Ingredients

chicken wings as needed
scallions as needed
Sichuan peppercorns as needed
star anise as needed
cinnamon stick as needed
dried red chili peppers as needed
ginger as needed
garlic as needed
cooking oil as needed
salt as needed
dark soy sauce as needed
light soy sauce as needed
rice wine as needed
sesame seeds as needed
baijiu as needed

Instructions

Rinse the chicken wings and set aside.

Make two cuts on the top and bottom of each wing, one after another.

Place the wings in a pot of cold water, add scallions, Sichuan peppercorns and baijiu, then blanch.

Remove the chicken wings, rinse them, and set aside the scallions, ginger, garlic and spices.

Heat oil in a pot, add the chicken wings and stir-fry until they turn slightly golden.

Add scallions, ginger, garlic, dried red chilies and rice wine.

Pour in an appropriate amount of hot water, add light soy sauce and dark soy sauce, then bring to a boil.

Once boiling, turn the heat to low and simmer for 20 minutes, then add salt to taste.
