Red Date Malt Cookies

Story

These cookies are a lifesaver for lazy bakers and beginners alike since there is absolutely no need to cream the butter. They also offer plenty of room for customization, allowing you to easily swap in any of your favorite dried fruits to suit your personal taste.

Ingredients

butter 100g
white sugar 30g
maltose 50g
salt 1g
dried red dates 40g
cake flour 200g
baking soda 1g
milk powder 10g

Instructions

Step 1

Let the butter return to room temperature and set aside; dice the dried red dates and set aside; (I used pre-diced dried red dates bought from Dawang, which just needed a little more chopping and were already pitted) sift the cake flour, baking soda, and milk powder together and set aside.

Heat 100g butter, 30g white granulated sugar, 50g maltose, and 1g salt over low heat until completely melted. Remove from heat, add the diced red dates, and stir evenly until completely cooled.

Add 200g cake flour, 1g baking soda, and 10g milk powder into step 2, mix using a cutting and folding motion until there is no dry flour, and press into a dough with your hands.

Place the dough into a plastic bag, press it flat, and refrigerate for 15 minutes.

Sprinkle an appropriate amount of bench flour on the working surface, place the dough on top, and roll it out with a rolling pin into a 0.5cm thick dough sheet.

Prick some small holes in the dough sheet with a fork, cut into square pieces, and place them in a baking pan.

Place into an oven preheated to 180 degrees Celsius, on the middle rack, for 15 minutes. Take out and let cool after baking.
