Ingredients

flour (sifted) 400 g
butter (melted and cooled) 40 g
eggs (beaten) 4
lemon (zest only) 1
ricotta cheese 500 g
salt a pinch
water 2 tbsp
olive oil (for frying) to taste

Instructions

1

Make the Dough

Sift the flour into a large bowl and mound it into a volcano shape. Melt the butter, let it cool, and stir in the 2 tbsp of water and the salt. Pour this into the flour well and mix with a spatula. Gradually add the beaten eggs and knead until the dough is smooth and soft. Shape into a ball, cover with a cloth, and let it rest for at least 1 hour.

2

Make the Filling

Stir the ricotta cheese together with the lemon zest, cover, and set aside in the refrigerator.

3

Assemble the Dumplings

Divide the dough into 4 portions and roll each into a long, thin strip as long as possible. On 2 of the strips, use a bowl as a guide to cut out 8–10 cm round discs. Place a small mound of filling on each disc, then cover with a disc cut from the remaining strips. Pinch the edges firmly and gently crimp to seal.

4

Fry the Dumplings

Heat the olive oil in a large skillet and fry the dumplings in batches. Lift them out with a slotted spoon and drain on paper towels.
