Rimming a Glass with Salt

Brush egg white onto the rim of a glass and dip it in coarse salt to create a decorative salted rim for cocktails such as Margaritas.

Rimming a Glass with Salt

Ingredients

egg white 1
water (cold) about 1 tbsp
Margarita salt or coarse salt (spread on a plate, about 1/8 to 3/16 inch thick) to taste

Prepare the Egg White Mixture

Separate the egg white from the yolk of one egg, place the egg white in a small glass bowl, add about 1 tablespoon of cold water, and whisk thoroughly until combined. Then pour the mixture onto a flat plate.

Prepare the Salt Plate

Spread a layer of coarse salt about 1/8 to 3/16 inch thick on another flat plate, and smooth it out with a spatula.

Dip in Egg White Mixture

Hold the glass upside down and tilt the rim to dip into the egg white mixture, rotating the glass so the rim is evenly coated with the liquid. Avoid pressing flat, as pressure can cause an uneven egg white coating.

Dip in Salt

Use a cotton swab to wipe away any excess egg mixture dripping down the glass. Keep holding the glass upside down and use the same rotating motion to dip the rim into the salt plate, gently pushing so it picks up the salt crystals. Avoid pressing too hard and knocking the salt off the rim.

Set Aside

Stand the glass upright on a clean surface, and repeat the above steps for all the glasses you need.
