Rock Sugar Hunan Lotus Seeds
A traditional Hunan dessert made by simmering steamed Xiang white lotus seeds with rock sugar and fruit to create a light, sweet soup with a delicate, soothing flavor.

Hunan white lotus seeds (peeled, cored, and steamed until soft)

Rock sugar (melted, then strained to remove impurities)

Fresh pineapple (peeled and diced)

Dried longan flesh (washed)

Steam the Lotus Seeds
Peel and core the white lotus seeds, then steam them until soft. Drain off the liquid and transfer the seeds to a bowl.

Prepare the Ingredients
Wash the dried longan flesh, peel the pineapple, and cut it into dice.

Cook the Sugar Syrup
Place a wok over medium heat and add 500 g of water. Add the rock sugar and let it dissolve, then strain out any impurities. Add the prepared ingredients and bring to a boil. Pour the sweet soup into a serving bowl and serve.
