Rum Balls

Ingredients

Chocolate wafer cookie crumbs (about 9 oz chocolate wafer cookies, crushed, such as Nabisco Famous Chocolate Wafers) 2½ cups
Chopped walnuts (finely chopped) 1 cup
Powdered sugar 1 cup
Unsweetened cocoa powder 2 tbsp
Light rum ⅓ cup
Light corn syrup 3 tbsp
Extra cocoa powder or powdered sugar (for coating the rum balls) to taste

Instructions

1

Mix the dough

In a large bowl, combine the chocolate wafer crumbs, walnuts, powdered sugar, and cocoa powder. Add the rum and corn syrup and stir until the mixture holds together into a thick paste.

2

Shape and coat

Place about ⅓ cup of cocoa powder or powdered sugar in a small bowl (or divide between two bowls). Roll the dough into 1-inch balls (or use a mini ice cream scoop), working a few at a time and rolling them in the cocoa powder or powdered sugar to coat.

3

Storage

Layer between sheets of wax paper in an airtight container and store in the refrigerator or a cool, dark place for up to 1 month (these treats improve with age); or freeze for up to 3 months. Best served at room temperature.
