Saint-Nectaire Baked Potatoes

Ingredients

Saint-Nectaire cheese (peeled, cut into 5mm thick slices) 120 g
Potatoes (boiled with skin starting from cold water) 3
Heavy cream 100 ml
Garlic (small, minced) 1/2
Butter 10 g
Salt a pinch
Pepper a pinch
Nutmeg a pinch

Instructions

1

Prepare the potatoes

Boil the potatoes with their skin on starting from cold water; do not overcook. Once cooked, wrap them in a cloth to peel, then cut into bite-sized pieces.

2

Prepare the cheese

Peel the Saint-Nectaire and cut into 5mm thick slices. Mince the garlic.

3

Make the sauce

Melt the butter in a pan, add the minced garlic and sauté over low heat, being careful not to burn. Once fragrant, add the heavy cream and simmer over medium heat. When it begins to thicken, add salt and pepper, stir in the potatoes, and sprinkle with nutmeg to combine.

4

Bake

Place the potatoes in a baking dish, top with the Saint-Nectaire, and bake in the oven for about 20 minutes. Bake until the cheese melts and turns slightly golden brown.
