Salad Sticks with Two Dipping Sauces

Story

Crisp celery, cucumber, and colorful bell peppers are cut into sticks and served chilled, making for a refreshing crunch. Pair them with the rich, spicy kick of the Mentaiko dip or the creamy, aromatic herb dip for a light and satisfying snack.

Ingredients

White cheese (for Mentaiko dip) 100g
Spicy Mentaiko (peeled) 50g
Lemon juice 1/4 tsp
White cheese (for herb dip) 100g
Fresh cream 2 tsp
Finely chopped green onion (chopped, preferred herbs can be used) 1 tsp
Minced garlic 1/4 tsp
Minced Asian shallot (minced onion can be substituted) 1/4 tsp
Salt a pinch
Pepper a pinch
Celery (remove tough fibers, cut into 1cm wide sticks) 1/2 stalk
Cucumber (cut in half length, then slice lengthwise into 6-8 strips) 1 piece
Red bell pepper (remove stem and seeds, cut into 1cm wide sticks) 1/2 piece
Yellow bell pepper (remove stem and seeds, cut into 1cm wide sticks) 1/2 piece

Instructions

Make Mentaiko Dip

First peel the spicy mentaiko, then mix all ingredients: white cheese and lemon juice.

Make Herb Dip

Mix white cheese, fresh cream, finely chopped green onions, minced garlic, and minced Asian shallots, then season with salt and pepper.

Prepare Vegetables

First remove the coarse fibers from the celery and cut into 1cm wide sticks. Cut the cucumber in half lengthwise, then slice into 6-8 strips. Remove the stems and seeds from the red and yellow peppers, then cut into 1cm wide sticks.

Serve

Add some ice cubes as desired, and serve by dipping the vegetable sticks into the dips.
