Salt-Braised Duck

A traditional Shanghai dish made with whole duck as the primary ingredient, marinated in Sichuan peppercorn salt and then steamed. The duck meat is tender with a savory, well-balanced flavor.

Salt-Braised Duck

Ingredients

whole duck (washed clean) 1
Sichuan peppercorns (for marinating) to taste
salt (for marinating and steaming) to taste
scallion to taste
ginger to taste
Shaoxing rice wine to taste

Instructions

Marinate

Wash the duck thoroughly and rub Sichuan peppercorns and salt generously over both the inside and outside of the bird. Marinate for 3 hours.

Steam

Place the marinated duck in a steamer together with ginger, scallion, salt, and Shaoxing rice wine. Steam over high heat for 10 minutes, then switch to medium heat and steam for another 20 minutes until fully cooked. Remove from the steamer and let cool. When serving, pour the steaming broth over the chopped duck pieces.
