These rustic fritters are a fantastic way to use whole grains and beans. The millet adds a delightful nutty texture, while the green beans provide a fresh crunch. Perfect for a hearty breakfast or a light lunch.

Ingredients

Millet 1/2 cup, soaked overnight
Yellow Soybeans 1/2 cup, soaked overnight and hulled
Green Beans (String Beans) 1 cup, sliced into thin rounds
All-purpose Flour 1 cup
Eggs 2 large
Baking Powder 1 teaspoon
Salt 1/2 teaspoon
Warm Water 1/2 cup (adjust as needed)
Cooking Oil For frying

Prepare the Beans and Millet

Drain the soaked yellow soybeans and rub them between your hands or towels to remove the skins. Chop the skinned beans into small pieces. Drain the millet well.

Blanch the Green Beans

Bring a pot of water to a boil. Add the sliced green beans and cook for about 2 minutes until just tender. Drain them thoroughly in a colander.

Mix the Batter

In a large mixing bowl, combine the flour, baking powder, salt, chopped yellow soybeans, blanched green beans, and eggs. Pour in the warm water gradually while stirring to create a thick batter. Finally, fold in the soaked millet. Let the batter rest for 10 minutes to allow the flavors to meld.

Fry the Fritters

Heat a generous amount of oil in a skillet over medium heat. Drop spoonfuls of the batter into the pan and flatten slightly. Fry for 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil before serving.
