Step 1
Wash the scallion and cut into segments. Keep the root part, as it has a sweating-inducing effect. (Soak a bit longer to remove dirt.)
Step 2
Prepare the required ingredients. Brown sugar is used to taste, since it only serves as seasoning—especially for children, too much sugar may cause tooth decay. Red dates are optional; my main purpose in adding them is also to mellow out some of the pungent flavor.
Step 3
Add enough water in one go, then add the scallion, ginger, red dates, and brown sugar.

I like to cover with a lid and simmer for a longer time, about 25-30 minutes.
Step 5
If serving to children, it's best to strain the liquid. If it tastes too pungent, you can dilute it with some plain water.
Step 6
A bowl of ginger brown sugar water will warm the body, and you'll start sweating after a while. However, it is only suitable for wind-cold colds—use it only after judging the condition correctly.
