Scallion Soft Pancakes

Story

These scallion pancakes are crisp on the outside and tender on the inside. The aroma of frying scallions fills the kitchen and makes it hard to wait for them to cool!

Ingredients

all-purpose flour 1 cup
eggs 2 large
green onions 4 stalks, finely chopped
toasted white sesame seeds 2 tablespoons
salt 1/2 teaspoon
black pepper 1/4 teaspoon
vegetable oil 3 tablespoons, plus more for frying
water 3/4 cup

Instructions

Mix the dry ingredients

Combine flour, salt, and pepper in a large bowl. Make a well in the center.

Add wet ingredients

Crack eggs into the well and pour in the water. Whisk everything together until you have a smooth, lump-free batter. Stir in the chopped scallions and sesame seeds.

Cook the first side

Heat a tablespoon of oil in a non-stick pan over medium heat. Pour about 1/4 cup of batter per pancake. Cook until bubbles form on the surface and the edges look set, about 3 minutes.

Flip and finish

Carefully flip each pancake. Cook another 2-3 minutes until the bottom is golden brown and crispy. Repeat with remaining batter, adding more oil as needed.
