Ingredients

all-purpose flour 1 cup
cornmeal 1/2 cup
wheat germ 1/4 cup
salt 1/4 tsp
canned Chunk Light tuna (packed in vegetable oil, use with the oil) 6 oz can
canned sardines (about 3/4 oz) 1 large can
large egg 1

Instructions

1

Baking Preparation

Move two oven racks to positions near the center and preheat to 350°F. Line two baking sheets with parchment paper.

2

Mixing the Dry Ingredients

In a medium bowl, combine the flour, cornmeal, wheat germ, and salt. Set aside.

3

Making the Dough

Place the tuna along with its oil in a food processor and process until chopped, about 15 seconds. Add the sardines and process until chopped, about 15 seconds. Add the egg and process until combined. Scrape down the sides of the bowl and process a few seconds more. Sprinkle the flour mixture over the tuna mixture, quickly beat to combine, then process until the dough clumps together, about 15 seconds.

4

Cutting the Biscuits

Turn the dough out onto a work surface and knead into a disc. Roll out with a rolling pin to 1/8 inch thick; lightly dust the dough and the surface with flour as needed to prevent sticking. Using a fish-shaped cookie cutter that is 1 3/4 inches long and 3/4 inch wide at the widest point, cut out as many biscuits as possible and arrange them on the baking sheets about 1/4 inch apart. Gather the scraps, re-roll, and continue cutting until all the dough is used up.

5

Baking

Bake on the two pans for 14 to 16 minutes, switching the pan positions midway through, until the biscuits just begin to turn a very light golden brown. Let the biscuits cool completely on the baking sheets.
