Seafood Salad Papaya Boat
A refreshing seafood salad served inside a hollowed-out papaya boat.

Prepare the papaya boat
Cut the papaya in half and remove the seeds. Scoop out the flesh with a spoon, taking care not to damage the skin so it can be used as a container. Cut the flesh into diamond-shaped pieces and set aside.

Cook the seafood
Slice the scallops and shrimp into pieces. Blanch them briefly in hot water until cooked through, then drain and set aside.

Assemble the salad
Combine the cooked seafood and papaya pieces. Spoon the mixture into the reserved papaya skins to serve.
