Step 1
Prepare the ingredients as shown in the picture.

Place the ribs in a pot with cold water and blanch to remove blood.

Wash the blanched ribs with warm water to remove scum.

Place the ribs in a clay pot, smash the ginger and add it to the pot, add sufficient water, bring to a boil over high heat, then switch to low heat to simmer.

Peel the lotus root, wash it, cut into rolling wedges.

Soak the lotus root in light salt water for about half an hour.

Simmer the ribs for about half an hour, place the lotus root in the clay pot, and continue simmering for one hour.
