Shanxian Lamb Soup

Shanxian Lamb Soup

Ingredients

lamb 500 g
Sichuan peppercorn 5 g
cinnamon bark 5 g
dried tangerine peel 5 g
cilantro 50 g
black cardamom 5 g
galangal 10 g
angelica root 5 g
scallion 10 g
refined salt 15 g
chili oil 25 g
Sichuan peppercorn water 15 g
clove powder 5 g
cassia bark powder 5 g
soy sauce 5 g
sesame oil 25 g

Instructions

Step 1

Wash the lamb and cut it into blocks 10 cm long, 3.3 cm wide, and 3.3 cm thick. Break the lamb bones and spread them across the bottom of the pot, then place the lamb on top. Add water to cover the meat, bring to a rolling boil over high heat, skim off the blood foam, and pour off the broth (do not use it).

Add fresh water, bring to a rolling boil over high heat, and skim off the foam. Then add an appropriate amount of water, skim off the foam again after it boils, add the lamb fat and simmer briefly, and skim off the foam once more.

Wrap the Sichuan peppercorns, cinnamon bark, dried tangerine peel, black cardamom, galangal, and angelica root in cheesecloth to make a spice bag. Place it together with the ginger slices, scallion segments, and refined salt into the pot. Continue cooking over high heat until the lamb is about 80% done, then add the chili oil and Sichuan peppercorn water. Cook for about two hours until done.

The soup pot should be kept at a rolling boil throughout. Remove the cooked lamb, slice it thinly against the grain, place it into bowls, and sprinkle with chopped cilantro to make the meat soup.

Place the chili oil and large scallion segments into a small dipping dish, and arrange the lotus leaf pancakes on a large plate. Serve everything together with the lamb soup. To eat, add a small amount of chili oil, wrap the scallion segments in the lotus leaf pancakes, and enjoy them alongside the lamb soup.
