Shiitake Stewed Guinea Pig

Shiitake Stewed Guinea Pig

Ingredients

Chopped guinea pig pieces 500 g
Rehydrated shiitake mushrooms (washed, water squeezed dry) 200 g
Shaoxing wine 0.5 tbsp
Ginger wine 0.5 tbsp
Ginger 1
Fine salt 3 tsp
MSG 1.5 tsp
White pepper (sprinkle at the end) 1 tsp
Vegetable oil 1 tbsp
Boiling water 6 cup

Pre-treatment

Blanch the guinea pig pieces in boiling water, then drain off the liquid.

Stir-frying

Heat the vegetable oil in a wok to about 40% hot. Add the guinea pig pieces and pour in the ginger wine, stir-frying until fragrant.

Stewing

Wash the shiitake mushrooms and squeeze them dry, then place them in a stewing pot. Arrange the stir-fried guinea pig pieces on top of the mushrooms, then add the ginger pieces, Shaoxing wine, fine salt, MSG, and boiling water. Transfer immediately to a steamer and stew until tender. Remove the ginger pieces and sprinkle with some white pepper to finish.
