Ingredients

Pork tenderloin (shredded, marinated with starch) 400 g
Soaked golden ear mushroom (steamed, arranged around plate edge) 200 g
Green peas (blanched) 100 g
Green onion (shredded) 100 g
Fresh ginger (shredded) 10 g
Lard (50g actual use) 1000 g
Egg white 2
Stock 100 g
Salt to taste
Wet starch to taste
Pepper a pinch

Prepare ingredients

Cut the pork tenderloin into shreds and mix with a pinch of salt, MSG, pepper, wet starch to taste, and egg white until well combined. Shred the green onion and ginger. Combine MSG, pepper, and stock into a seasoning sauce.

Steam the golden ear

Add salt to taste, MSG, pepper, and stock to the golden ear, then steam until fully cooked and arrange around the edge of the serving plate.

Stir-fry the shredded pork

Blanch the green peas. Heat oil in a wok over high heat; when it reaches about 40°C, add the shredded pork and green peas, pour in the seasoning sauce, toss a few times, drizzle with finishing oil, and transfer everything to the plate lined with golden ear.
