Shrimp and Potato Dumplings
Dumplings filled with potato and dried shrimp.
Ingredients
potato (peeled, washed, and chopped into fine filling)
500 g
dried shrimp (finely chopped)
50 g
scallion and ginger (minced)
10 g
fine salt
8 g
MSG (monosodium glutamate)
2 g
sesame oil
5 g
flour (mixed with cold water and kneaded until smooth)
500 g
Instructions
1
Prepare the Filling
Peel and wash the potatoes, then chop them into a fine filling. Add the salt, MSG, and sesame oil and mix well. Finely chop the dried shrimp, mince the scallion and ginger, then combine them evenly with the potato filling.
2
Make the Dough and Wrappers
Mix the flour with cold water and knead until smooth. Divide the dough into 80 small pieces, roll each piece into a thin wrapper, place a portion of filling in the center, and fold into crescent-shaped dumplings.
3
Boil the Dumplings
When the water in the pot comes to a rolling boil, add the dumplings and gently stir them with a ladle to keep them from sticking. Once the dumplings float to the surface, cover the pot and cook until done, then ladle them out and serve.
