Shrimp Stir-Fry with Straw Mushrooms

Ingredients

shrimp (cleaned and patted dry, mixed with salt, pepper, and egg white, marinated for 10 minutes) 300 g
straw mushrooms (blanched in boiling water with a pinch of salt, then rinsed with cold water) to taste
bok choy (washed) to taste
carrot (peeled, boiled first, then sliced) to taste
egg (use the egg white for marinating) 1
cooking oil 30 g
cooking wine 1 tbsp
pepper 1 tsp
salt 1 tsp
MSG 1 tsp
wet cornstarch to taste

Instructions

1

Marinate the shrimp

Clean and pat dry the shrimp, mix with an appropriate amount of salt, pepper, and egg white, and marinate for 10 minutes. Wash the bok choy.

2

Prepare the supporting ingredients

Add a pinch of salt to boiling water, blanch the straw mushrooms, then remove and rinse with cold water. Peel the carrot, boil it first, then slice it.

3

Flash-fry the shrimp

Heat an appropriate amount of oil in a wok to about 70% hot, add the shrimp and flash-fry just until they turn opaque and separate, then remove. Pour out the excess oil.

4

Combine and finish the stir-fry

Leave a little oil in the wok, stir-fry the bok choy, carrot slices, and straw mushrooms, then return the shrimp to the wok. Add the cooking wine, salt, a splash of water, pepper, wet cornstarch, and MSG, and stir-fry until everything is evenly coated and combined.
