Shrimp with Egg Tofu

Ingredients

Shrimp (deveined, rinsed and patted dry, mixed with marinade for 10 minutes) 160 g
Egg tofu (cut into 1/2-inch thick pieces) 2
Strawberries (use not specified in original) 1/2 cup
Scallion (cut into segments) 1
Garlic cloves (sliced) 2
Red bell pepper (cut into rings) 1/2
Straw mushrooms (sliced) to taste
Salt (marinade) 1/4 tsp
Sesame oil (marinade) a pinch
White pepper (marinade) a pinch
Cornstarch (marinade) 1 tsp
Water (sauce) 1/2 cup
Light soy sauce (sauce) 1 tbsp
Oyster sauce (sauce) 1 tbsp
Sugar (sauce) 1/2 tsp
Cornstarch (sauce) 1.5 tsp

Instructions

1

Marinate the shrimp

Remove the vein from the shrimp, rinse, and pat dry. Mix with the marinade (1/4 tsp salt, a pinch of sesame oil, a pinch of white pepper, and 1 tsp cornstarch) and let sit for 10 minutes.

2

Prep the ingredients

Cut the egg tofu into 1/2-inch thick pieces, slice the straw mushrooms and garlic, cut the scallion into segments, and slice the red bell pepper into rings.

3

Stir-fry

Heat 2 tbsp of oil. Stir-fry the shrimp first, then add the garlic slices, scallion segments, and straw mushrooms and toss together. Pour in the sauce, add the red bell pepper, and stir to combine.

4

Add the tofu

Finally, gently fold in the egg tofu and transfer to a plate. Add the egg tofu last so it does not fall apart and the dish looks presentable.
