Silky Tofu Steamed Eggs

Story

This comforting dish balances the subtle sweetness of soft tofu with the richness of eggs. The ham adds a savory pop, while ginger and scallion bring gentle warmth. Perfect for a quick lunch or a light dinner.

Ingredients

soft tofu (silken or regular) 300g, drained and mashed
eggs 2 large
water 80ml
diced ham 3 tablespoons
scallions 2 stalks, minced (white and green parts separated)
fresh ginger 1 teaspoon, grated
salt ½ teaspoon
sesame oil 1 tablespoon

Prepare the tofu base

Press the tofu gently with paper towels to remove excess moisture, then mash it with a fork until smooth. Transfer to a mixing bowl.

Mix the egg custard

Crack the eggs into the bowl with the tofu. Add water, the white parts of the scallions, grated ginger, and salt. Whisk until everything is well combined and slightly frothy.

Add ham and steam

Pour the mixture into a shallow heatproof bowl. Sprinkle the diced ham evenly over the top. Place in a steamer, cover, and steam over medium heat for 10 minutes until just set.

Finish and serve

Remove from the steamer carefully. Drizzle the sesame oil over the top and garnish with the green parts of the scallions. Serve immediately while hot.
