Singapore-Style Stir-Fried Rice Noodles

Ingredients

Rice noodles 70g
Pumpkin 20g
Dried shrimp 10g
Shredded pork 20g
Crispy fried shallots A pinch
Cilantro A pinch
Curry powder (seasoning) 1 tbsp
Fine sugar (seasoning) 1/3 tbsp
Soy sauce (seasoning) 1.5 tbsp
White pepper (seasoning) A pinch
Water (seasoning) A pinch

Instructions

Step 1

Heat oil in a pan, briefly fry the shredded pork until cooked, then remove and drain.

Soak the rice noodles in hot water until soft, then remove and drain. Peel and seed the pumpkin, wash, and cut into thin strips for later use.

Leave a little oil in the pan. Once heated, add the curry powder and stir-fry until fragrant, then add the remaining seasonings and stir until evenly combined. Add the rice noodles, pumpkin, dried shrimp, shredded pork, and crispy shallots in order, and stir-fry over low heat until everything is well mixed. Once the pumpkin is cooked through, plate the dish and garnish with a little cilantro before serving.
