Smashed Cucumber Salad
Cucumbers are sweet, crisp, and refreshing. They can be eaten fresh, made into juice, cold-dressed, or stir-fried. Avoid prolonged high-heat cooking; when stir-frying, cook quickly and remove from the heat. To make this cold dish, smashed cucumber, choose a fresh, firm cucumber with green, glossy, prickly skin. If it will not be eaten immediately, store it in a resealable bag in the refrigerator and eat it soon to prevent moisture loss.

Instructions
Step 1
Wash the cucumber. Since it will be eaten raw, briefly pour warm water over the skin; you can skip this if the cucumber is homegrown and known to be safe. Place it on a cutting board and bang it back and forth with a knife until it cracks. This will help the dressing penetrate. Cut the cucumber into bite-sized pieces.
Step 2
Peel the garlic, smash each clove flat with the knife, and finely chop them.
Step 3
Heat the peanut oil in a pan. Add the chopped garlic and fry until fragrant, then stir in the light soy sauce, salt, sugar, and sesame oil.
Step 4
Finally, add vinegar and mix well.
Step 5
Place the cucumber in a bowl, pour the dressing over it, and add the sesame seeds.
Step 6
Toss until everything is evenly coated and serve.
