Snowball Cookies

Snowball Cookies

Ingredients

unsalted butter (melted in microwave) 90 g
walnut halves (chopped) 30 g
cake flour 130 g
almond flour 30 g
fine granulated sugar 40 g
salt a pinch
powdered sugar (for dusting) 25-30 g

Prepare the Ingredients

Place the butter in a heatproof bowl, cover with plastic wrap, and microwave for 20–30 seconds until melted. Chop the walnuts into small pieces.

Make the Dough

Sift the cake flour, almond flour, granulated sugar, and salt through a fine-mesh sieve into a bowl. Add the walnuts and stir with a small spatula. Pour in the melted butter and bring the mixture together into a dough. Wrap in plastic wrap and refrigerate for 1 hour.

Bake

Preheat the oven to 180°C (350°F). Roll the dough by hand into 3 cm balls. Place them on a parchment-lined baking sheet, spaced apart, and bake at 180°C for 12–15 minutes.

Coat with Sugar

When the cookies are still slightly warm, transfer them to a plastic bag. Add the powdered sugar and shake the bag so the cookies get coated in a thin layer of sugar.
