Ingredients
Instructions
Advance preparation
Prepare the chocolate fondant and color it black. Roll out to 1/8 inch thick and cover the base board (p.123). Reserve the remaining black fondant. Meanwhile: make and assemble the snowmen (p.125).
Make star decorations
Roll out white fondant 1/8 inch thick. Use the smallest cutter to cut out 45 stars. Brush with piping glue and sprinkle with sparkling sugar. Let dry on a cornstarch-dusted surface.
Prepare the cake
Bake and cool the two-tier cake (trim to 2½ inches high, making 5-inch high tiers). Prepare the stacking structure (p.116) and cover with 60 oz colored fondant (p.119).
Make snow drifts
Roll out white fondant 1/8 inch thick for the snow drifts. For the 6-inch cake, cut 20×2 inch strips; use a knife to cut random waves along the top edge. Roll up the strips then unroll them around the bottom of the cake, adhering with a damp brush; smooth. For the 10-inch cake, cut 20×2 inch and 12×2 inch strips and repeat.
Make decorative scrolls
Roll white fondant into ropes of 1/8 inch diameter and varying lengths. Use piping glue in a parchment bag to pipe scroll patterns onto the snow drifts; adhere the ropes onto the patterns, trimming as needed. Pipe a line of piping glue along the ropes; spread evenly with a brush. Sprinkle with sparkling sugar.
Assemble the cake
Place the cake on the prepared base. Use piping glue to adhere the stars to the sides of the cake. Insert the snowmen, trimming the sticks as needed. For the bottom snowman, cut a small hole in the base board with the tip of a knife to secure the stick. Serves 40.
