Step 1
In a bowl, beat the butter and sugar. Add the egg, corn syrup, and dark syrup. Add the flour and ginger, and mix until a stiff dough forms. Refrigerate for 20 minutes.
Step 2
Meanwhile, preheat the oven to 180°C (Th. 6) and line 2 large baking sheets with baking paper.
Step 3
On a work surface lightly dusted with flour, roll out the dough to 1 cm thick. Cut into heart and star shapes using cookie cutters. Place the cookies on the prepared baking sheets, leaving a little space between them.
Step 4
Bake for 10 minutes until the cookies have puffed up. Cool on a wire rack.
Step 5
Melt the chocolate in the microwave or over a water bath. Dip the heart-shaped cookies in the melted chocolate. Place the icing sugar in a bowl, add a sufficient amount of water to adjust to a thin enough consistency, and drizzle over the star-shaped cookies.
