Spicy Beef Cubes (辣子牛肉丁)
Marinated diced beef is stir-fried with cucumber, seasoned with chili paste, and thickened with starch to create this Korean spicy-flavored dish.

Marinate the Beef
Wash the beef, remove the sinews, and cut it into 1 cm cubes. Marinate with refined salt and black pepper powder.
Prepare the Aromatics
Wash the cucumber, trim the ends, seed it, and cut it into cubes the same size as the beef. Peel and wash the scallion, then cut it into segments the same size as the beef cubes. Peel and wash the ginger, then cut it into squares. Peel and wash the garlic, then slice it.
Coat the Beef
Place the marinated beef cubes in a bowl, add soy sauce and cornstarch and mix to coat evenly, then add a little oil and stir to combine. Set aside.
Prepare the Sauce
In a small porcelain bowl, combine beef broth, cornstarch, soy sauce, sugar, MSG, scallion segments, ginger squares, and garlic slices to make a starchy sauce. Set aside.
Stir-Fry and Serve
Heat a wok and add peanut oil. When the oil is about half-hot, add the marinated beef cubes and stir-fry evenly. Once the beef cubes separate, add the chili sauce and stir-fry until fragrant. Pour in the Shaoxing wine and stir-fry to combine, then add the prepared starchy sauce and stir well. When the sauce comes to a boil, toss a few times, then transfer to a plate and serve.
