French-style cupcakes filled with candied fruit and topped with marzipan or fondant stars.

Star Cupcake

Ingredients

flour 150 g
candied fruit (diced, 30g mixed with flour) 200 g
eggs 2
caster sugar 150 g
baking powder 0.5 tsp
butter (melted, for batter) 100 g
vanilla extract 1 tsp
butter (for buttercream, softened at room temperature) 100 g
powdered sugar 100 g
vanilla extract (for buttercream) 0.5 tsp
milk (as needed, to adjust buttercream consistency) 1 tsp
marzipan or fondant (for decoration) to taste
gel food coloring to taste

Prepare the batter

Preheat the oven to 180°C (setting 6). Place paper cupcake liners into a muffin tin. Mix 30g of flour with the candied fruit. Use an electric hand mixer to beat the eggs and sugar until the batter turns pale and fluffy, then add the vanilla extract. Melt the butter, and mix the remaining flour with the baking powder. Add this mixture to the egg and sugar mixture, then stir in the melted butter. Finally, gently fold in the flour-coated candied fruit with a spatula.

Bake

Divide the batter into the paper liners, place in the oven and bake for 20 minutes. Let cool on a wire rack.

Make the buttercream

Use an electric hand mixer to whip the softened butter, powdered sugar and vanilla extract into buttercream. If it is too dry, add 1 tsp of milk to adjust the consistency. Spread the buttercream on the cupcakes with the back of a knife, place a piece of marzipan or fondant on top and press gently. Tint the remaining buttercream beige, cut into shapes and attach to the cupcakes with water for decoration.
