Steamed Jujube Rice Cake
Mix glutinous rice flour, rice flour, date paste, and pork lard. Steam until cooked, then let cool, cut into pieces, and serve.
Ingredients
glutinous rice flour

non-glutinous rice flour
to taste
red dates (washed, steamed until soft, then peeled, pitted, and mashed)
to taste
red bean paste
to taste
cooked pork lard
to taste
diced pork fat
to taste
pine nut kernels (pressed onto the cake)
to taste
peanut oil (for brushing the molds)
to taste

Step 1
Combine the mashed dates, red bean paste, and cooked pork lard in the appropriate proportions. Simmer gently until fragrant, stirring until completely combined, then set aside to cool.

Combine the glutinous and non-glutinous rice flours, then mix in the date paste. Fold in the diced pork fat and knead until evenly incorporated. Press pine nuts onto the dough and place it in a mold brushed with peanut oil, filling no more than 3 cm deep at a time. Steam for about 50 minutes, remove, and let cool. Chill in the refrigerator for best results. Turn out onto a plate and serve.
