Steamed Pork Ribs with Black Bean Sauce

Ingredients

pork ribs (washed and cut into small pieces) 250 g
fermented black beans 3 tbsp
choy sum 4
small red chili peppers (minced) 2
scallions (chopped into rings) a few
ginger a few slices
starch 1/2 tbsp
cooking wine 1 tbsp
sugar 1 tbsp

Instructions

1

Marinate the ribs

Wash the pork ribs and cut them into small pieces. Marinate with the cooking wine for 5 minutes, then drain off the liquid.

2

Arrange on plate

Lay ginger slices across the bottom of a plate. Coat the ribs with starch and arrange them on top of the ginger, then cover with a few more ginger slices.

3

Prepare the seasoning

Heat a small amount of oil in a pan. Fry the minced red chili and fermented black beans together with the sugar until fragrant, then pour the mixture over the ribs.

4

Steam the dish

Steam the ribs over medium heat for about 20 minutes. While steaming, blanch the choy sum in boiling water in a separate pot. When the ribs are nearly done, arrange the choy sum around the ribs and finish by sprinkling the chopped scallions on top.
