Story

This recipe transforms fresh raspberries into a warm, silky steamed pudding. The starch creates a tender set while letting the bright berry flavor shine through. Perfect for a light dessert or afternoon treat.

Ingredients

fresh raspberries 2 cups
granulated sugar 3 to 4 tablespoons, to taste
honey 1 to 2 tablespoons, to taste
potato starch or cornstarch 3 tablespoons
cold water 3 tablespoons

Prepare the raspberries

Rinse the raspberries under cool water and pat dry. Transfer to a mixing bowl and mash with a fork or potato masher until broken down but still slightly chunky.

Sweeten the fruit

Add the sugar and honey to the mashed raspberries. Stir well until the sugar dissolves. Taste and adjust sweetness to your preference.

Mix the starch slurry

In a small bowl, combine the starch with the cold water. Stir until completely smooth with no lumps.

Combine and steam

Pour the starch mixture into the raspberry mixture and stir until evenly combined. Transfer to a heat-safe bowl orramekin. Place in a steamer and steam over medium-high heat for 15 minutes until set and slightly translucent.

Serve warm

Remove from the steamer and let cool for a few minutes. Serve warm as is, or garnish with fresh raspberries, a drizzle of honey, or a sprinkle of powdered sugar.
