Stir-Fried Asparagus with Carrots
Asparagus is nutritious and beloved for its simplicity—fresh spears need only a brief blanch and work beautifully poached, stir-fried, or in a cold salad. Here, I pair it with carrots, a nutrient-rich vegetable sometimes called "little ginseng." Together, the two make a quick stir-fry with naturally sweet, vibrant flavor.

After purchasing the asparagus, trim off the tough lower ends and rinse clean. Fill a pot with an appropriate amount of water and bring it to a boil. Add a pinch of salt and a few drops of oil, then blanch the asparagus for about one minute.

Remove the blanched asparagus, rinse under cold water, then cut into small sections.

Peel the carrot, rinse, then cut into thick strips.

Heat an appropriate amount of oil in the pan, add the garlic and sauté until fragrant.

Add the carrot strips and stir-fry evenly.

Then add the blanched asparagus.
