Stir-Fried Bitter Melon with Char Siu

Bitter melon from a family friend, paired with homemade fermented tofu and honey-glazed char siu, makes for another delicious dish.

Stir-Fried Bitter Melon with Char Siu

Ingredients

bitter melon 4
char siu as needed
garlic 3 cloves
oyster sauce 1.5 tbsp
sugar 2 tsp
salt 2 tsp
corn oil 1.5 tbsp

Step 1

Bitter melon given by a friend. (This type of bitter melon is quite bitter, so I usually do a debittering treatment; that's the only way kids will eat it.)

Wash the bitter melon, cut it in half lengthwise, remove the pith and seeds, then slice.

Sprinkle 2 tsp of salt over the sliced bitter melon, mix well, and marinate for 15 minutes to remove bitterness.

Rinse the bitter melon with water to wash away the salt after the bitter liquid is released.

Mince the garlic.

Cut the char siu into thick strips. (The char siu is homemade; see the recipe for Fermented Tofu Honey-Glazed Char Siu.)

Heat oil in a pan and sauté the minced garlic until fragrant.

Add the char siu and stir-fry briefly.

Add the bitter melon and stir-fry until well combined.

Add oyster sauce and sugar, stir well, cover, and cook until the bitter melon is tender.
