Super Appetizing Side Dish: Smashed Green Chili with Century Egg (10 minutes)

Step 1 Rinse the green chili peppers, remove the stems, and pat dry thoroughly with paper towels. Heat a dry flat pan over medium-low heat and dry-roast the peppers until the skins wrinkle and char. (Alternatively, use a charcoal grill or oven.) Transfer to a bowl, cover with a lid, and let steam for 2 minutes so the charred skins peel off easily.

Step 2 Peel the garlic and mince; set aside. Shell the century eggs and cut into small chunks (or halve them), taking care not to chop too finely so the texture is preserved. Peel off the charred skins from the peppers and tear them into small pieces by hand.

Ingredients

green chili peppers 6-8 pieces
garlic 6-8 cloves
light soy sauce 2 spoons
salt 1/4 spoon
aromatic vinegar 1 spoon
oyster sauce 1 spoon
white sugar half spoon
sesame oil half spoon
century eggs 2-3 pieces (adjust to your taste, more or less as preferred)

Step 1: Wash the green thread chilies and remove the stems, pat dry with kitchen paper. Place the chilies in a dry frying pan over medium-low heat and fry until the skin is wrinkled and charred; you can also roast them over charcoal or in an oven. After frying, transfer to a bowl, cover with a lid and let steam for 2 minutes to make it easier to peel off the charred skin.

Step 2: Peel the garlic and mince it, set aside. Peel the century eggs and cut into small pieces (or halve them) to avoid cutting them too small which would affect the texture. Peel off the charred skin from the chilies and tear them into small sections by hand.

Step 3: Add the torn chilies and minced garlic to a mortar, along with a small pinch of salt. Use a pestle to pound firmly until the chilies are mashed into a soft, mushy paste, releasing their fragrant spicy flavor.

Step 4: Add the following to the mashed chilies: 2 spoons of light soy sauce, 1 spoon of aromatic vinegar, 1 spoon of oyster sauce, a small amount of white sugar, and a small amount of sesame oil. Stir well, taste and adjust the salt amount to your preference.

Step 5: Transfer the mixed smashed chili and century egg to a serving bowl, sprinkle with a little minced garlic for garnish. Serve with hot rice for a spicy, flavorful, extremely appetizing meal! Warm tip: If you prefer it spicier, you can keep the chili seeds, or add some small millet chilies.
