Stir-fried Cucumber with Dried Shrimp

Ingredients

Cucumber (washed, cut into strips about 1 inch long and 1/3 inch wide; peel if using old cucumbers) 300g
Dried shrimp (washed, placed in a small bowl with a little boiling water (level with the shrimp) to soak) 25g
Chopped scallion (for stir-frying) 5g
Minced ginger (for stir-frying) 5g
Fine salt (for seasoning) 4g
Cooking oil (for stir-frying) 35g

Instructions

1

Soak the dried shrimp

Wash the dried shrimp to remove any dust, place in a small bowl, add a little boiling water (level with the shrimp), and soak.

2

Prepare the cucumber

Wash the cucumber (peel if using old cucumbers), then cut into strips about 1 inch long and 1/3 inch wide.

3

Stir-fry

Place the wok over the flame, add the cooking oil and heat. Add the chopped scallion and minced ginger, stir-fry briefly, then add the drained dried shrimp and stir-fry slightly. Add the cucumber and fine salt, stir-fry for about one minute, and it is done.
