Stir-Fried Deer Antler Mushroom

Velvet mushroom has an unexpectedly high protein content, making it a great regular addition to the diets of growing kids at home. An affordable dried ingredient, you only need to soak a small portion before cooking. Pair it with side dishes or meat for dishes that are both delicious and nutrient-dense. I’ve tested a range of preparations recently—stewed with meat, stir-fried, added to fried rice, and more—and it turns out perfectly no matter how you prepare it. It has a short soaking time and cooks quickly, so it’s a hit with the whole family.

Stir-Fried Deer Antler Mushroom

Ingredients

Deer Antler Mushroom 60g
Carrot 1/2
Cucumber 1/2
Oil 1 tbsp
Chopped scallion As needed
Pork A small amount
Premium Soy Sauce 2 tbsp
Oyster Sauce 1 tbsp
Salt 1 tsp

Instructions

1

Step 1

Let's take a look at the main ingredient—deer antler mushroom. I've been cooking it a lot at home lately because my kids love it. I make it every few days, stir-frying or stewing it, switching up the styles so it never gets boring.

Step 2

Since these are dried, they don't weigh much. A small amount expands quite a bit once rehydrated, so one bag is enough for several meals.

3

Step 3

Take an appropriate amount of deer antler mushroom, rinse it thoroughly with clean water, then soak it in fresh water. It rehydrates very quickly; if you're in a hurry, you can use boiling water and it'll be ready in minutes.

Step 4

Now let's prepare the side vegetables. I'm using carrot and cucumber here, but you can really use any vegetable you like when stir-frying deer antler mushroom. I've also tried bok choy, broccoli, etc., and they all turn out great. Slice the cucumber and carrot and set them aside.

Step 5

Once the simple prep work is done, it's time to stir-fry. Heat oil in a pan, add the chopped scallions and fry until fragrant, then add the pork belly slices and stir-fry until they change color.

6

Step 6

Squeeze the excess water out of the rehydrated deer antler mushroom and add it to the pan. Add the carrot and cucumber slices (or other vegetables) at the same time and stir-fry for 1 minute.

7

Step 7

Add the premium soy sauce and oyster sauce and stir well to season. Since deer antler mushroom itself doesn't have a strong mushroom flavor, simple seasonings are enough to make it delicious. Add a small amount of water, stir well, cover and simmer for about 2 minutes. Once the liquid has evaporated, add a small amount of salt and stir well, then it's ready to serve.

Step 8

Plate it up—simple, quick, and incredibly delicious.
