Stir-Fried Fresh Squid with Satay Sauce

Ingredients

fresh squid (scored in a crosshatch pattern, then cut into small pieces and briefly blanched in boiling water) 150 g
celery (peeled and cut into small slices) 1
green chili pepper (cut into small slices) 1
red chili pepper (cut into small slices) 1
rehydrated black fungus (cut into small slices) 1
ginger slices to taste
minced garlic to taste
satay sauce 1 tsp
oyster sauce 1 tbsp
white pepper powder 1/2 tsp

Prepare the ingredients

Score the squid in a crosshatch pattern, cut into small pieces, and blanch briefly in boiling water; peel the celery and cut into small slices; cut the green chili pepper, red chili pepper, and black fungus into small slices.

Stir-fry

Heat oil in a wok, sauté the ginger slices and minced garlic until fragrant, add the celery slices, black fungus slices, and satay sauce, and stir-fry. Add the squid pieces, green chili slices, and red chili slices, season with oyster sauce and white pepper powder, stir-fry until evenly combined, and serve.
