Stir-fried Sweet Potato Leaves with Minced Garlic
Sweet potato leaves are a common countryside crop, often fed to pigs or discarded. Yet these bright green, tender leaves are highly nutritious—outranking spinach and celery in most nutrients, with carotenoid levels 3 times higher than carrots and over 600 times higher than fresh corn or taro.

Step 6
Then add the leaves and stir-fry.
