Stir-fried Tofu Brain

Ingredients

silken tofu (peeled and mashed into a paste) 500 g
soaked dried shrimp (minced) 50 g
salted potherb mustard (washed, squeezed dry, minced) 25 g
green garlic sprouts (cut into segments) to taste
minced scallion and ginger to taste
fine salt to taste
cooking wine to taste
scallion segments (sprinkled on top after cooking) to taste

Preparation

Wash the potherb mustard, squeeze it dry, and mince; mince the soaked dried shrimp; cut the green garlic sprouts into segments; peel the silken tofu and mash it into a smooth paste.

Stir-frying

Heat oil to about 60% hot, add the minced scallion and ginger to sizzle, then add the tofu paste, dried shrimp, potherb mustard, fine salt, and cooking wine. Stir-fry for 3 minutes, transfer to a plate, and sprinkle with scallion segments to serve.
