Stir-Fried Yellow Beef
A spicy stir-fry of tender marinated yellow beef, quickly tossed with bird's eye chilies, celery, and pickled chili brine.
Ingredients
Yellow beef (remove fascia, cut into 0.2 cm thick slices)
200 g
Millet chili (cut into rice-grain shapes)
50 g
Pickled chili water
20 ml
Celery (cut into rice-grain shapes)

Egg (use egg white)

Tenderizer powder

Step 1
Remove the fascia from the yellow beef and cut it into 0.2 cm thick slices. Add the tenderizer powder, soy sauce, salt, MSG, egg white, and starch slurry to marinate. Cut the millet chilies and celery into rice-grain shapes, and mince the garlic.

Heat oil in a wok. Add the beef and stir-fry until about 80% cooked. Remove and set aside in a bowl.

Heat oil in a wok. Add the minced garlic, millet chili bits, and celery bits and stir-fry until fragrant. Pour in the pickled chili water, add the beef, season with salt and MSG, and toss evenly. Drizzle with sesame oil and serve.
