Strawberry Mousse Cake

Story
This cake combines the light, airy texture of chiffon with a rich, fruity mousse made from fresh strawberries, white chocolate, and yogurt. Slices of fresh strawberries line the mold for a beautiful presentation, while a clear jelly glaze adds a finishing touch. It is a delightful dessert that balances sweetness with the vibrant aroma of fresh berries.

Step 1
Prepare and bake an 8-inch basic chiffon cake in advance (I will release the chiffon recipe I used later).
Step 2
Soak the strawberries in salt water for ten minutes, then wash them! Pick out 200 grams of the ones with poor appearance, and blend them with a blender for later use!
Step 3
Cut the chiffon cake into two slices, not too thick! Use a knife to cut away a 0.5 cm wide edge around the cake; the diameter of the cake placed at the bottom should be longer than the one on top!

Slice the strawberries to line the sides; the strawberry slices should stick close to the mold, leaving a gap between them and the cake to facilitate pouring the cream later!
Step 5
Whip the cream to 60% consistency, refrigerate for later use, and put in the cream to melt and separate the water and oil!

Heat the blended strawberry puree with sugar until the sugar melts, add the white chocolate melted over a water bath and the gelatin powder dissolved in hot water, mix well, let it cool slightly, then add the strawberry yogurt! (The gelatin powder is not easy to dissolve, it is best to sieve it once, which does not affect the texture! Otherwise it will be quite a surprise when eating.)

Mix the strawberry mixture from the previous step thoroughly with the cream, pour into the prepared mold; I added a layer of strawberry filling in the middle!
Step 8
Add the second layer of bread, then pour in the cream; here my bread was a bit thick and the first layer of cream was poured a bit thick, so the top is round and not flat! Everyone must pay attention to this when making it!
Step 9
After 1 hour, create some decoration on top! Heat the QQ candy over a water bath, add strawberry juice (I used Rumeng brand, the color is better), let it cool slightly, and pour it onto the cake!
