Strawberry Oufeixiang

Combining the comforting texture of mashed potatoes with the fun of a fried snack, this Strawberry Oufeixiang is a unique and delightful treat. The molded potato dough is fried to golden perfection before being generously coated in strawberry-flavored chocolate and finished with a drizzle of rich bittersweet chocolate for a balanced flavor profile.

Step 1
Sift all the dry powder ingredients from the batter mixture through a sieve, pour into a mixing bowl together with the remaining batter ingredients, mix evenly at medium speed, remove the batter with a scraper, wrap with plastic wrap, and let rest for about 20 minutes.
Step 2
Remove the rested batter from Step 1, roll it out into a sheet about 1.5 cm thick with a rolling pin, wrap with plastic wrap again and let rest for about 10 minutes, cut out ring shapes with a donut mold, brush the surface with a little flour, arrange on a flat plate and let rest again.
Step 3
Heat the strawberry chocolate and bittersweet chocolate separately over a double boiler to about 50°C until melted into a liquid state.
Step 4
Pour an appropriate amount of oil into a frying pan and heat to 180°C. Use a scraper to lift the donut dough from Step 2, lightly score the surface with a knife, place in the oil and fry until golden yellow. Remove, drain the oil, immediately coat the surface with the melted strawberry chocolate from Step 3, let cool and set, then pipe the bittersweet chocolate on for decoration.
