This classic comfort dish offers a harmonious blend of textures and flavors, where tender beef absorbs the savory richness of the braising liquid, perfectly complemented by the delicate aroma of fresh straw mushrooms.

Ingredients

Beef (washed and sliced, mixed with soy sauce, oil, water, and starch, then marinated for half an hour) 500g
Straw mushrooms (roots removed and washed) 200g
Tomatoes (washed, peeled, and cut into chunks) 400g
Green onions (washed and minced) 2 stalks
Ginger (peeled and minced) 1 small piece
Garlic (washed and minced) 2 cloves
Cooking oil (for frying beef) 30g (actual consumption)
Soy sauce (for marinating and seasoning) 1 teaspoon
Ketchup (seasoning) 1 tsp
Refined salt (seasoning) 1 tsp
White sugar (seasoning) 1 tsp
MSG (seasoning) 2 tsp
Starch (marinating and thickening) Appropriate amount

Instructions

Marinate the beef

Wash and slice the beef, then mix well with soy sauce, oil, water, and cornstarch; let it marinate for half an hour. Wash the tomatoes, peel them, and cut into chunks; wash and chop the green onions, ginger, and garlic.

Fry the beef

Add oil to a wok and heat until very hot. Pour in the beef and fry until 70% cooked, then remove and drain the oil.

Stir-fry the ingredients

Leave a small amount of oil in the pot, add the green onions, ginger, garlic, and tomatoes, and stir-fry for about 2 minutes. Then add an appropriate amount of water, salt, ketchup, sugar, and MSG.

Finish cooking

After the tomatoes have softened, add the beef and stir-fry briefly. Thicken the sauce with cornstarch, stir well, and transfer to a serving plate.
