Sugar-Free Pea Cake (Wandou Huang)

Story

A staple of traditional Chinese dessert tables, this sugar-free pea cake has a delicate, smooth texture that melts in your mouth; the most common issue when making it is cracking when cut, which is easily avoided by not making the pea puree too thick during preparation.

Ingredients

peas 200g
sugar substitute to taste

Instructions

1

Step 1

Soak the peas until soft, then peel them.

2

Step 2

Place the soaked peas into a rice cooker, add water (slightly more than the amount used for cooking rice), then press the rice cooking button.

3

Step 3

After the peas are fully cooked, mash them with a spoon.

4

Step 4

Transfer the mashed peas into a fine-mesh sieve and strain them.

5

Step 5

Transfer the strained peas into a cooking pot, add the sugar substitute.

6

Step 6

Continuously stir-fry until the mixture thickens.

7

Step 7

Transfer the thickened mixture to a container and refrigerate it.

8

Step 8

Once fully cooled, take it out and cut it into cubes.
