Ingredients

bacon strips (diced) 6
chopped onion 1 cup
sauerkraut (rinsed and drained) 1 can (16 oz)
kielbasa or Polish sausage (cooked, coarsely chopped) 1/2 lb
brown sugar 2 tbsp
garlic salt 1/2 tsp
caraway seeds 1/4 tsp
pepper 1/8 tsp
hot roll mix 1 package (16 oz)
eggs (separated) 2
warm water (120° to 130°) 1 cup
butter (softened) 2 tbsp
poppy seeds to taste

Instructions

1

Make the filling

Fry bacon in a skillet until crispy; remove to paper towels. Reserve 2 tablespoons of drippings. Sauté onion in drippings until softened. Stir in sauerkraut, sausage, brown sugar, garlic salt, caraway seeds, and pepper. Cook for 5 minutes. Remove from heat; stir in bacon. Let cool.

2

Prepare the dough

Combine hot roll mix in a bowl. Add 1 egg, water, and butter; knead into a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 5 minutes. Cover with a large bowl; let rest for 5 minutes.

3

Shape the bundles

Divide dough into 16 portions. On a floured surface, roll each into a 4-inch circle. Place 1/4 cup filling on each circle. Fold dough over filling and shape into a ball; pinch edges to seal. Place seam side down on a greased baking sheet. Loosely cover with plastic wrap coated with nonstick cooking spray. Let rise in a warm place for 15 minutes.

4

Bake

Beat remaining egg; brush over dough. Sprinkle with poppy seeds. Bake at 350°F for 16-17 minutes or until golden brown. Serve warm.
