Sweet Potato Soup
A sweet, creamy soup made with cooked sweet potatoes, milk, butter, and cheese.

Blend the sweet potato
Crumble the cooked sweet potato into a blender, add a small amount of milk so it can be blended smoothly.
Cook the soup
Pour the blended sweet potato into a pot, add the butter and the remaining milk, and bring to a boil.
Thicken and season
To prevent sticking, stir continuously with a spatula. Once the soup thickens, add the cheese and let it melt.
Finish cooking
As the water evaporates to a certain extent, the soup will thicken thanks to the starch from the sweet potato. At this point, turn off the heat.
Plate the dish
Pour the hot soup into bowls. Use a cutter to shape the cheese slices and place them on top as garnish.
Optional garnish
Alternatively, slice the sweet potato thinly, pan-fry until cooked, and place on top of the soup as garnish.
