Three-Cheese Stuffed Biscuits

Three-Cheese Stuffed Biscuits

Ingredients

mild cheddar cheese (shredded) 75 g
sharp cheddar cheese (shredded) 50 g
parmesan cheese (shredded) 50 g
unsalted butter (cubed) 115 g
cake flour 150 g
garlic salt ½ tsp
chili powder ¼ tsp
cream cheese (for filling) 115 g

Mix Cheese and Butter

Line a baking sheet with parchment paper. Mix the three types of shredded cheese with the butter until evenly combined. Sift in the cake flour, garlic salt, and chili powder, stir into the butter-cheese mixture, and knead into a soft dough.

Shape and Chill

Shape the dough into a round log 4 cm thick, wrap tightly with plastic wrap, and chill in the refrigerator for 15 minutes until firm.

Cut and Bake

Preheat the oven to 175°C (350°F/Gas Mark 4). Cut the dough into slices 3 mm thick, place them on the prepared baking sheet, and bake for 10 to 12 minutes. Remove from the oven and let cool completely.

Fill and Store

Once cooled, spread cream cheese on the bottom of half the biscuits, then sandwich with the remaining biscuits. Store in an airtight container in the refrigerator for 1 to 2 days.
