This comforting dish takes the classic, rustic trio of potatoes, eggplants, and green peppers, allowing them to simmer together until they form a rich, savory sauce. Fresh noodles are then braised directly in the pot, soaking up all the delicious, umami-packed juices. Prepare the main ingredients.

Knead the flour into a smooth dough and let it rest for 20 minutes.

Wash the potatoes, carrots, green peppers, and onions, cut into small pieces, and set aside.

Wash the pork and slice it; mix well with light soy sauce and starch.

Roll the dough out into a large sheet, fold it, and cut into strips; shake them apart evenly.

Heat oil in a pan, stir-fry the pork slices until separated, then remove and set aside.

With the remaining oil in the pan, sauté the onions until fragrant, add the potatoes and carrots, and stir-fry evenly with a little salt.
