Poach the chicken
Wash the chicken breast and place it in a pot with cold water. Add ginger, green onion, bay leaf, and cinnamon stick. Bring to a boil and simmer until cooked through.
Cool and shred the chicken
Remove the chicken from the pot and immediately plunge it into cold water or an ice bath to stop cooking. Once cooled, shred the meat into thin strips by hand.
Prepare the vegetables
Cut the king oyster mushrooms into thin strips, or shred them by hand. Cut the cucumber into thin strips as well.
Toss the salad
Combine the shredded chicken, mushroom strips, and cucumber strips in a bowl. Toss well to mix before serving.
